This month’s vegan cooking adventure is Winter Soups! Join us to learn the ins and outs of preparing healthy and warming soups.  Zoom in from your home kitchen for this live, interactive, cooking experience. When you finish the class, you will have prepared soups to feed 4 to 6 people.

In this workshop Sheila shows you how to prepare:  

  • Carrot Ginger soup with Orange
  • Broccoli and Cauliflower soup
  • Potato Leek soup.

 Sheila attended the plant-based Culinary Institute Boot Camp in Napa, CA, and she loves sharing what she learned with you. She is the founder and owner of Wellness Becomes You. With clear instructions and good cheer, Sheila makes your cooking process easy and fun. 

 Come with your curiosity, a cutting board and your favorite knife and spoon for stirring, and let the fun begin. You will also need a sauté pan and two or three pots to simmer the soups.  An immersion blender is helpful for blending the soups, or you can use a blender.

 Recipes will be provided when you sign up!

 The ingredient list for your convenience:

  • 1 pound of carrots
  • Avocado oil or other neutral oil
  • Onions
  • Ginger – fresh
  • 1 orange
  • 6 or more cups vegetable broth or veggie bouillon
  • 8 oz broccoli (can use fresh or frozen and stems)
  • 4 or 5 oz cauliflower (can use fresh or frozen)
  • Stalk celery
  • 3 cloves garlic (or 1 ½ tsp minced)
  • Red pepper flakes
  • 2 white potatoes (white sweet potatoes also work well)
  • 2 leeks or yellow onions

 

For protein enhancement you can add or substitute:

  • Tempe, seitan, or tofu
  • Vegetarian/vegan sausage
  • Cannellini beans
  • Garbanzo beans
  • Milk (cow, goat, soy, or almond/cashew pea protein milks are high protein)
  • Shredded cheese (only dairy cheeses tend to have much protein)
