Join us – your Still & Moving Center health-foodie friends – for a DESSERT adventure! Let’s have fun and learn to cook through the magic of Zoom. We would love for you to invite Sheila Wrede into your home kitchen for this hands-on cooking workshop, and when you finish, you can serve sumptuous desserts able to meet most dietary restrictions! 

Sheila, the owner of Wellness Becomes You, will show you how to prepare a Gluten-free Vanilla Cake, a Keto Tiramisu, and Chocolate Avocado Pudding. Sheila recently attended a plant-based Culinary Institute Boot Camp in Napa, CA, and she loves sharing what she learned with us. 

You will need an oven or toaster oven, two 8 inch square pans to bake the cakes in, then to prepare the tiramisu. Please have on hand a blender to make the keto mascarpone from the cashews, and to blend the pudding.  You can use a standard mixer or hand mixer to make the cake. You can also use a mixer to cream the coconut cream with powdered sugar (or whip by hand with a whisk), then blend it into the mascarpone mixture.

The main ingredients you will need are: 

1 ½ cups almond flour

½ cup coconut flour

3/4 cup cane sugar

2 tsps baking powder

¾ cups butter (or dairy free vegan butter such as Earth Balance, if preferred)

4 eggs (or use flax eggs, if preferred)

3 teaspoons vanilla extract

1 ¼ cups cashews (raw and unsalted)

½ cup unsweetened almond milk

5 tablespoons coconut oil

1/3 cup maple syrup

1 tsp lemon juice

1 cup coconut milk (or almond milk)*

2 cans of coconut milk (chilled – you will use hardened cream portion for one recipe and the “milk” poured off from it can be used as the 1 cup needed above*

2 tablespoons powdered sugar

1 ½ cups cold brew or instant coffee

½ cup cocoa powder

1 large or 1 ½ small banana

1 ripe avocado

 Note:  The cake recipe can be halved for one cake to use for the tiramisu. If you bake two cakes per the recipe, you can freeze one for later use, or you can frost it with your frosting of choice, or serve it topped with fresh fruit.

Dr. Dean Ornish demonstrated in 1990 that eating a whole food, largely plant-based diet could reverse heart disease, as well as provide other health benefits, including weight loss. It’s no surprise at Still & Moving Center that this diet works when combined with moderate aerobic exercise, group support and stress management training!
